01 / ABOUT THE PLACE

About this place

The first choice at Menya Toraji is between Toraji Ramen, a soy-based bowl made with pork-bone and chicken stock, and Spicy Miso Ramen, which pairs mellow, sweet miso with a lingering heat. Both come with firm, medium-thick curly noodles and vegetables, making them hearty options. One diner who ordered Toraji Ramen reported choosing extra noodles and vegetables, along with extra garlic; the generous portion of vegetables included crisp cabbage, and the noodles were on the thick side. The bowl also came with a seasoned egg. Another diner, torn between the regular ramen and the spicy miso, chose the former and enjoyed it with extra noodles and vegetables.

Menu information describes the spicy miso as a rich blend of pork-bone and chicken stock, the mellow sweetness of miso and a gradually building heat. One visitor who chose the miso ramen also praised how its rich, slightly sweet broth clung to the medium-thick curly noodles. The menu notes that you can choose your noodle and vegetable portions when ordering, making it easy to stick with the standard serving or opt for a larger one when you’re hungry.

For a noodle dish without broth, the Special Mazesoba and Taiwan Mazesoba offer different flavours. Special Mazesoba combines medium-thick curly noodles with soy-based sauce and back fat, topped with chopped onion, spicy miso, bamboo shoots and black pepper. Garlic and mayonnaise are served separately, and you can adjust the flavour with vinegar or chilli oil from the table; a raw egg is another option. Taiwan Mazesoba is topped with spicy minced chicken, garlic chives, white and regular onion, seaweed and fish powder. It also lends itself to a final bowl of white rice, mixed with the sauce and toppings left behind after the noodles. Mixing the toppings as you eat makes for a different experience from ramen, and the rice finish is handy if you want to make a fuller meal of it.

To round out a noodle order, consider the Chashu Rice, topped with seared pork belly, sweet sauce and a raw egg, or the chashu rice bowl seasoned with a ginger-forward sauce. Either makes a satisfying extra if you’re still hungry after the noodles. The restaurant is also described as suitable for dining solo, whether you’re stopping by for lunch or dinner.
